Description
Winemaking at Bacco is an art merging tradition and innovation. Our Chardonnay block is carefully managed to yield a balanced crop. In the cellar only the finest free-run juice is fermented, followed by delicate oaking for 12 months. This wine exudes exotic spiced fruit and flinty notes upfront, followed by a creaminess on the palate and citrus-tinged finish. Enjoy with vegetable risotto, seafood and cured meats.

Vineyard
1.6ha of Chardonnay planted on sandy topsoil with hard red clay subsoil, ferrecrete deposits and scattered quartz. 2022 was the first vintage from this block that was planted in 2019, Pruning in winter left one bud per shoot. During the growing season the vineyard was monitored for stress and managed to ensure there is optimal balance between fruit, vigour and canopy.
Vinification
Grapes were handpicked and bunch sorted then de-stemmed and pressed. The free run juice was kept separate from the hard pressed juice. The free run juice was transferred to stainless steel tanks where it was gently mixed before being racked to barrels where it underwent alcoholic fermentation. The hard press juice was fermented separately. The wine fermented naturally for the first 2/3 of the process, after which it was inoculated with commercial yeast strain to ensure complete fermentation. The entire batch consisted of 5 barrels in total, 2x225L new French oak and 3x300L neutral French oak barrels. Fermentation and maturation took place over a 12 month period. All barrels were combined, stabilised and then bottled.
