Description
Winemaking at Baccō is an art merging tradition and innovation. Our small planting of Vermentino has delivered grapes with outstanding site and varietal expression. This vibrancy is protected in the cellar through skin contact and neutral oaking. Aromas of lime, grapefruit and flowers precede a pithy fruit core and stony minerality on the palate. The perfect pairing for fresh seafood, pork, fennel and apple.

Vineyard
1ha of Vermentino planted in 2018. The maiden vintage from this vineyard was 2021. This vineyard block has been planted on sandy topsoil with a clay subsoil layer which has scattered ferrecrete and quartz deposits. This varietal grows vigorously in these climatic conditions. The vines are pruned according to the guyot system ensuring good sun exposure to the bunches during the ripening season.
Vinification
Grapes were handpicked, hand sorted, de-stemmed and transferred into the press where they spent 6 hours on the skins prior to pressing to ensure maximum extraction of flavour and aroma from the grape skins. Once optimal extraction was reached, the pressing cycle took place. The juice was then transferred to stainless steel tanks, racked into neutral 4x300 litre Frenck oak barrels and underwent alcoholic fermentation and maturation for 12 months. Neutral oak was used to preserve the purity of the fruit in the wine, and not have any intense oak flavours imparted into the wine.
Maturation
The wine was matured in 300 litre neutral French barrels for 12 months in order to preserve the purity of the fruit in the wine without having intense oak flavours imparted into the wine.
