Description
Winemaking at Baccō is an art merging tradition and innovation. Selected grape batches from various vineyard blocks receive gentle treatment in the cellar to create a complex and fresh, yet pure wine. This dry rosé has an alluring onion-skin colour with enticing flavours of strawberry, peach, turkish delight and red cherries. Best enjoyed with crunchy salads, salmon with asparagus and any poultry dish.

Vineyard
Selected areas of the vineyard blocks are designated for the Rosé production and careful monitoring of these sections during ripening season ensures picking at the optimal time to achieve a balance of phenolic ripeness, acidity and sugar to ensure the creation of a fresh yet pure wine.
Vinification
All varieties are hand picked, undergo bunch sorting followed by individual berry sorting, The grapes are then crushed and transferred into the press where they lie on the skins for a couple of hours, depending on the variety, in order to extract the required amount of colour. All varieties are pressed and transferred into stainless tanks, racked into 300 litre neutral French oak barrels where they underwent alcoholic fermentation and maturation over 12 months. Prior to bottling, blending of the components takes place with the aim of achieving our definition of top quality Rosé
Maturation
All varieties were separately matured for 12 months in neutral 300 litre French oak barrels, tasted and blended.
