Description

The flagship Baccō Blend is Cabernet Sauvignon driven and has an intense, deep red hue. The nose has a beautiful expression of black current, blackberries and black forest cake with a hint of vanilla. There is a bright mineral undertone with a hint of white chocolate. This is a beautiful bouquet wine with the perfect balance of well-integrated oak, acid and alcohol. This wine is contained and well-rounded with a luxuriously velvet palate and a lingering finish.

Vineyard

This is our premium wine and precision viticulture is necessary in order to produce this standard of quality. Our Merlot and Cabernet Sauvignon blocks are planted in sandy topsoil with red clay subsoils with quartz and ferrecrete deposits. As a result we get great concentration in the fruit. Both Merlot and Cabernet Sauvignon follow a meticulous viticultural management program, which includes dropping any grape bunches that are under-ripe, and cutting out any green berries in the bunches

Vinification

All bunches follow our standard processing protocol of double sorting by hand: first whole bunch sorting, followed by de-stemming then berry sorting. The grapes were then gently crushed, just to perforate the skin and release some juice. The grapes were cold soaked in a stainless-steel tank for a couple of days to extract colour and flavour before undergoing alcoholic fermentation. Once alcoholic fermentation is complete, the wine is drained and the remaining solids are pressed and transferred into French oak barrels but kept separate.

Maturation

The Cabernet Sauvignon and Merlot varietals are matured separately in new French oak barrels and the Malbec in neutral oak. Barrel maturation for 22months, blended, bottled and matured for another 18 months before release.
