Description
This Chardonnay is a blend of fruit from Terre Paisible’s very own Chardonnay vineyards in Franschhoek and Stellenbosch Mountain fruit. A delicious marriage of two distinct styles – opulence and austerity. Whole-bunch pressed juice was fermented in a selection of new 300L barrels of blonde toast levels, combined with wine matured in neutral 500L barrels. Full Malolactic fermentation ensued, and a lengthy maturation on lees. The result is a glorious celebration of Chardonnay, showcasing the variety’s appeal to a large audience of wine lovers. Terre Paisible’s very own Chardonnay vineyard grows on the river terrace of the Berg River, about 8km from the town of Franschhoek. The fertile alluvial soils provide ample nutrients and water for these vines to flourish. Abundant flavour and ripeness issues forth from this site. The Blaauwklippen Road forms the lower boundary of the Stellenbosch Berg vineyards that form the other half of this blend. Here we are on a rocky river terrace, South West facing and relatively nutrient poor. The wines coming from these soils are lean and austere, with razor sharp acidity and provide wines with a linear palate.From a fabulous white wine vintage in the Cape comes this blend of Franschhoek and Stellenbosch Mountain fruit.
