Description
Harvested from 35 year old vines, Les Dames de 1987 Sauvignon Blanc expresses the tropical, ripe fruit spectrum of the variety showcasing pine apple and nectarine aromas. Ripe Star King apple and thinly sliced cucumber are reflected on the delicate palate, which is balanced by velvety smooth length. After whole bunch pressing and minimal settling the wine was fermented in stainless steel before racking to a 4000L foudre for maturation. 9 months maturation on lees in a 4000L foudre provides this wine with a classic ageing potential. Wine is made from 35 year old vines grown along the Berg River in Franschhoek. The vines were planted in 1987 and it is one of the few Old Vines Sauvignon Blanc wines from South Africa.
Vinification
After whole bunch pressing and minimal settling the wine was fermented in stainless steel before racking to a 4000L foudre for maturation.
Maturation
