Vineyard
Planted on the foot slopes of the Helderberg mountain cool Atlantic ocean breezes leads to slow ripening grapes. The Vines are planted in decomposed granite soil
Vinification
Hand harvested multiple picks between 22-23 B, destemmed and settled overnight. Transferred to older French oak barrels. Partial spontaneous and inoculated. 4-5 Months on the fine lees, rack and returned to barrel for another 4-5 months maturation.
