Vineyard
Produced from vineyards throughout the cooler Western Cape regions.
Vinification
Harvest commenced in January with the varietals being handpicked. Pinot Noir and Chardonnay were pressed separately, with fractional recovery on the whole bunches that ensures the cuvee juice is kept separate from the press fractions. All components are fermented in stainless steel at 14 to l6°C.
