Description
All pruning and harvesting is done by hand to ensure that only healthy grapes are used. Bunches are hand sorted at the cellar before destemming. Fermentation took place in stainless steel tanks with regular pumpover to extract colour and flavour. A portion of the Merlot underwent malolactic fermentation in barrels and the rest in stainless steel tanks. Matured for 12 months. This Merlot has a beautiful red colour with ripe red berries and cocoa on the nose. Well balanced tannin structure with a lingering aftertaste. A delicious and rounded wine. A perfect match with veal chops and mushrooms
