Description
Metis Sauvignon Blanc was inspired by Pascal Jolivet and his holistic approach to winemaking in Sancerre. Using a unique and minimalistic approach to winemaking, we were able to make a wine that shows the true expression of the Constantia terroir. Aromas of kiwi fruit, grapefruit, blackcurrant, nutmeg and sage fill the nose. A confident palate follows, full bodied and layered. Concentrated with a rich white pepper and lime flavours supported by a mineral mouthfeel. Refreshing with a vibrant acidity, the wine concludes with a powerful saline finish.

Using a unique and minimalistic approach to winemaking, we are able to make a wine that shows the true expression of the Constantia terroir.
Vinification
A pure Sauvignon Blanc that reflects a sense of place rather than technique. Grapes were harvested from 4.00am from a selection of 6 different high lying blocks able to withstand the way in which the wine is made. The blocks are a combination of biodynamic, organic and sustainably farmed vineyards. No sulphur was added at crush and fermentation was wild. The wine was left to mature on the lees for a period of 12 months in a combination of stainless steel tank as well as 20% neutral oak barrels.
